Thai Red Curry Chicken
My husband Scott loves anything with coconut milk, anything. So this recipe was sort of happenstance because I wanted to make him something with coconut milk and I instantly thought of a Thai curry. Into my trusty slow cooker I threw a jar of store bought curry paste and 2 cans of coconut milk...some chicken etc. you can read the recipe below. And WHOA the result! Felt like we were at a Thai restaurant! In the words of my idol Ina Garten, "How easy is that?" We poured it over brown rice and, as always, the garnish is key! In this case the garnish was cilantro, chopped almonds, and Sriarcha! We licked our bowls clean! Why order in Thai food when you can make it this well in your slow cooker?!
1 onion, chopped
3 chicken breasts, cubed
2 cans lite coconut milk
1 (4oz) jar curry paste
Handful of sweetened coconut flakes, chopped
Mix all ingredients in slow cooker. Set on LOW for 6 hours.
Serve over rice of your choice. Garnish with fresh cilantro, chopped almonds and lots of Sriracha! :)
