Chicken Curry in Slow Cooker
Most people scare away from making Indian food at home, and I was certainly one of those people. But then one day I saw the jar of Madra’s Curry simmer sauce at the store and I thought, heck I’m gonna throw that in the slow cooker and see what happens! Oh wow did it turn out good! You can make this with whatever vegetables or meat you like, this is just how I like to make it. And I see no reason to make curry from scratch when this Madra’s sauce is so delicious. So there you go! You can make curry just as good as at the restaurants!
1 large boneless, skinless chicken breast - ask butcher to cut into 1” pieces
1 sweet potato, peeled and cut into bite size pieces
1 onion, diced
1 jar Madras Curry Sauce
½ bag frozen peas
Combine chicken, sweet potato, onion and curry sauce in your slow cooker. Cover and cook on LOW for 4-5 hours. About 15 minutes before serving, stir in frozen peas.
Serve over bowls of coconut rice (or plain white or brown rice). I like to garnish with cilantro and sriracha!
