Thai Chicken Salad
When I went to Thailand I ate pad thai every single day. I love Thai flavors, especially ones that involve peanuts. Turns out, my husband is obsessed with peanut sauce. Dang we're compatible! We bought this ThaiFusions peanut sauce (it's DELICIOUS) and I wanted to make something a little healthier than pad thai, so I threw all those ingredients into a salad. It was sooooo yummy we both had seconds and licked our bowls clean! If you're a Thai lover like us, you will love this easy flavorful salad!
1 head Napa cabbage
1/2 a rotisserie chicken
1 avocado, diced
Handful of shelled edamame
1 carrot, peeled and diced fine
1/2 a red bell pepper, diced fine
2 TBSP chives or green onions, chopped
2 TBSP fresh cilantro, chopped
Handful of peanuts, chopped
1/2 cup (or however much dressing you like!) of store bought peanut sauce *I used ThaiFusions Peanut Sauce
Drizzle of Sriracha
Toss it all together in a bowl! If you make it ahead, toss the peanuts and peanut sauce and sriracha in right before serving!
