Cobb Salad
My absolute favorite salad in the world is a Cobb! Talk about an all star combination of salad ingredients - we get bacon AND blue cheese? In a salad? Yes waiter, I'll have one of those! Turns out it's also a super simple, economical and hearty salad to make at home. I swap out the traditional creamy blue cheese dressing for an easy homemade avocado vinaigrette. It's just as creamy and delicious, without all the calories! I personally don't love hard boiled egg in my Cobb but hey if you're into it, add it! Otherwise toss this recipe together just like I did and you won't be disappointed!
1/2 a rotisserie chicken
2 heads romaine lettuce, chopped small
3-4 strips bacon, chopped into 1 inch pieces
1 avocado (chop 1/2 and save the other 1/2 for the vinaigrette)
Handful of cherry tomatoes, halved
1 bunch chives, chopped fine
3/4 cup crumbled blue cheese
For the Avocado Vinaigrette:
Other 1/2 of avocado
1 TBSP dijon mustard
1 TBSP olive oil
1/4 cup apple cider vinegar
1 tsp salt
1 tsp pepper
Cook bacon pieces in frying pan until its crispy. Drain off fat and set aside.
In a large bowl, add all the chopped up salad ingredients, including bacon.
In a small blender or Cuisinart, blend together all the vinaigrette ingredients.
Add vinaigrette to salad and toss together. Top with fresh ground black pepper.
*Makes enough for 2 people who are going to have seconds!!
