Turkey Chili
Oh turkey chili. This was the first recipe I tried as a nanny. I remember loving chili as a kid, so when I decided to introduce it to Teddy and Spencer, I knew I had to start basic - meat and beans and some seasoning. I really wanted them to like chili!!! And they loved it. Phew! And I’ve stuck with that same basic recipe, because you know what? It’s GOOD! I also like that this recipe is fat free so therefore guilt free? That is, of course, until you start adding sour cream and cheese and Frito’s! It's the best! Classic childhood food!
1 lb ground turkey
1 can black beans
1 can kidney or pinto beans
1 (28 oz can) diced tomatoes, preferably San Marzano
2 TBSP tomato paste
½ bag of frozen corn
2 TBSP chili powder
1 TBSP garlic powder
1 TBSP cumin
½ TBSP oregano
Salt and pepper
In a medium frying pan on med-high heat, brown the turkey, breaking it into pieces. Remove from heat and add to a large pot OR your slow cooker. Mix in the rest of the ingredients and let simmer for at least an hour, stirring occasionally (or set slow cooker to simmer).
Serve with Fritos, shredded cheese, sour cream, hot sauce, avocados, cilantro….
