Spencer’s Guacamole
Here’s reason #673 why I like to cook with the kids in the kitchen. I was making guacamole one night to go with our tacos. Six year old Spencer sat up on the counter and watched me, and maybe squeezed a lime for me. The next time we had to make guacamole she said “Can I do it?!” And I thought of course, let her try, (and I’ll reserve an extra avocado in case I quickly need to make it myself). But oh my god she NAILED IT. It was possibly the best guac I’ve ever had! I don’t quite know what she does (hence why I couldn’t provide measurements for the spices because that’s all her) - but she does it way better than I do. Atta girl!!!!
2 or 3 large ripe avocados
Juice of 2 limes
¼ cup chopped cilantro
Cumin
Garlic powder
Salt and pepper
In a small bowl, mash together the avocados with a fork. Add the rest of the ingredients and mix well. Serve with tortilla chips.
