Breakfast Potatoes
Interestingly I’ve never made these potatoes for breakfast - only when we eat breakfast for dinner! Breakfast for dinner is a great weeknight meal because you always have eggs on hand and well it’s yummy. So when I don’t have time to go to the store, I whip up a smoothie and some scrambled eggs and whatever bacon or sausage we have and these potatoes!! The most important part! Or sometimes we roll it all up into a breakfast burrito! Get creative with your breakfast for dinner menu!
8-10 small yukon gold potatoes
½ stick butter
2 tsp minced garlic
¼ cup fresh chopped parsley leaves (or 1 TBSP dried parsley)
Salt and pepper
Boil potatoes in a medium pot until tender when pressed with a fork. Remove from water, let cool, and dice the potatoes into large chunks.
Melt butter in a large frying pan, over medium-high heat. Add potatoes and garlic and cook, stirring occasionally, until potatoes are golden brown and slightly crispy. Season with parsley, salt and pepper.
Serve with ketchup and/or hot sauce!
