Avocado Egg Bacon Bundles
I saw a recipe like this on the internet and thought, well if that isn't a breakfast dream come true I don't know what is. As you'll see in my video, it's not as easy to make as the internet told me. And it's certainly not mess free. But, I'll keep practicing! The presentation is so fun and obviously the taste is breakfast goodness. Rise and shine!
1 large avocado
1 egg
2 slices bacon
Salt, Pepper, Red Chili Flakes
Parmesan Cheese, or any shredded cheese you like
Preheat oven to 350 degrees.
Cut avocado in half, remove pit, and carefully scoop out halves onto foil lined baking pan. Place one half onto 2 strips of bacon. Crack egg into the pit hole of the avocado - try to keep it all in the hole! Close the avocado by putting other half on top. Wrap the egg-filled avocado carefully with bacon. Bake for 20 minutes.
Remove bacon bundle from oven. Carefully slice in half. Sprinkle with salt, pepper, chili flakes, and shredded cheese.
Return to oven on HIGH BROIL for 5 minutes to melt the cheese.
Serve alone as a carb-free breakfast, or on top of a nice crusty baguette!
