Ok I’m gonna sound like I’m a writer for Self Magazine: “Breakfast is the most important meal of the day, but the majority of Americans skip it because they claim they don’t have time in the morning. Forgo the McDonald’s drive-thru on your way to work and make your own healthy on-the-go breakfast at home!” No seriously, that’s what we’ve been doing though. It’s a real easy routine to get into on Sunday nights (I’m usually doing it at like 10pm after dinner). All you really need is a carton of eggs and a package of turkey bacon - whatever veggies and cheese you have on hand is all you - and you’re set with a healthy breakfast for the week! Scott takes the Tupperware full of them Monday morning and keeps them in his little mini fridge, then he eats two a morning when he gets to work. How cute is that?! What’s not cute is that he eats them cold, but I guess I didn’t marry him for his leftover heating habits.

1 carton of eggs

1 package turkey bacon

Handful of spinach

Handful of shredded cheese

Salt & Pepper

Preheat oven to 350 degrees.

Spray a muffin tin with PAM (nonstick cooking spray). Cut the turkey bacon slices in half. Lay one half of a slice down the middle of a muffin cup. Cross the other half on top of it. (See video if this is confusing!) Repeat with the rest of the turkey bacon. Bake for 10 minutes so the turkey bacon starts to get crispy.

Remove from oven. Add a couple leaves of spinach to the bottom of each cup. Note: You can add more veggies here, but you don’t want to overfill it or the egg won’t “fit”.

Carefully crack one egg into each muffin cup. Using a fork or knife, break the yolk a little bit. Season all cups with salt and pepper. Sprinkle cheese on top.

Return to oven for another 8 minutes.

Remove from oven and pop your brekky bites out of the pan to cool! Pack in Tupperwares for the week!

To serve, reheat in the microwave!! Then top with hot sauce!

*Makes 10-12 Brekky Bites, depending on how many slices of turkey bacon are in the pack.
