Neiman Marcus Popovers with Strawberry Butter

If you looked up “crowd pleaser” in the dictionary, you’d see these popovers.  People literally GASP with excitement when they see these on the table!  Women who haven’t had a carb in months use their cheat day on these popovers!  I am excited to tell you that you can really make these just as good at home.  You just need to buy a popover pan! And be sure to follow the recipe exactly, it’s quite scientific.  At Neiman Marcus, they serve them with strawberry butter, but I have enjoyed playing around with all sorts of butter: pumpkin butter in the fall, fig butter in the winter, raspberry butter, apricot butter, etc.  Just substitute the strawberry for whatever jam or preserve you want!

3 ½ cups milk

4 cups all purpose flour

1 ½ tsp salt

1 tsp baking powder

6 large eggs, room temperature - a quick trick to bring refrigerated eggs to room temperature fast is to put them in a bowl and run under warm water for 1 minute

1 stick butter, softened

⅓ cup strawberry jam or preserves

 

In a large microwave safe bowl, microwave milk for 2 minutes.  Set aside.

In another bowl, combine flour, salt and baking powder.  Set aside.

In the bowl of an electric mixer fitted with a wire whisk, beat the eggs on low speed for about 3 minutes, until foamy and pale in color.  Stir in the warm milk and continue to beat at low speed.  Slowly add the flour mixture to the bowl whilst beating at low speed.  Once all flour mixture has been added, up the speed to medium and beat on medium for 2 minutes.  Let the batter rest (in the bowl) for 1 hour.

Prepare your popover pans by spraying generously with nonstick cooking spray.  Place pans on top of cookie sheets (easier to maneuver in and out of oven).  Preheat oven to 425 degrees.

Once the batter has rested for an hour, pour into prepared popover pans, filling each cup to the top.  Carefully place in oven, making sure there is a lot of room for them to pop!  Do not have your oven rack too close to top of oven!!!

Bake at 425 degrees for 15 minutes, then reduce heat to 375 degrees and bake for 30-35 more minutes, until popovers are golden brown.

While popovers are baking, make your strawberry butter in same electric mixer (wiped clean).  Beat together butter and jam on medium speed for about a minute.

Serve popovers hot and fresh out of the oven with butter on the side!
