Kale Chips
This is a snack that both Gwyneth Paltrow and I like to make. Among the many other things we have in common. Okay but seriously, I make kale chips at least once a week and in minutes the whole plate is devoured! Which means we've eaten an entire bag of kale the superfood -talk about rewarding! I challenge even the pickiest of vegetable eaters to try this. And then try to have just one!
1 (10 oz bag) chopped kale
Olive oil
Salt
Preheat oven to 375 degrees.
Pour kale out onto a baking pan. Toss with a generous amount of olive oil. Sprinkle with salt.
Bake for about 30 minutes, checking the oven occasionally to make sure it’s not burning. Kale is done when it is cooked down into small crispy chips. Remove from oven and snack all night long!
