Chilaquiles
I love ordering chilaquiles if I see them on a menu. Who knew that they are one of the easiest things to make at home? And doesn't everyone have a half bag of tortilla chips in the cupboard at all times? If you have that, and you have some sort of salsa or Mexican inspired sauce, then you're ready to make chilaquiles! This really is a "throw everything in the skillet" type of dish - a great recipe to clean out your fridge with. Try it - you really can't mess it up! Ole!
4 cups of salsa or enchilada sauce or taco sauce, or any combination of those!
1 bell pepper, sliced thin
1 large carrot, sliced thin
1 serrano or jalapeno pepper, seeds removed, and chopped
1/2 a bag of frozen corn
1/2 a rotisserie chicken, shredded and tossed in taco seasoning
1/2 a bag of tortilla chips
1 cup shredded Mexican cheese
Handful of fresh cilantro
Avocados, Sour cream, and hot sauce for garnish
In a large skillet, over medium high heat, add all the salsa/sauces you have. 4 cups is a good estimate but doesn't have to be exact. Stir in the bell pepper, carrot, serrano pepper, corn and chicken. Cook together for about 5 minutes. Add the tortilla chips and stir, breaking up the chips a little as you stir. Cook for about 5 more minutes, or until the chips are soft. Add the cheese and cilantro and simmer all together for another 5 minutes.
Serve with avocado, sour cream, hot sauce and anything else you can think of!
