Italian Chicken Salad

On Monday nights, I usually like to have salad for dinner. You know, to combat the presumably over-indulgent weekend. If you make a salad good enough, it's not a boring dinner at all! The homemade croutons are key in this one. And lots and lots of parmesan.  This salad is the perfect combination of texture and flavor.  It's delicious and filling too! My secret to any salad is adding a fresh herb - in this salad it’s parsley.  There, I gave away my secret, go nuts!

 

½ rotisserie chicken (Mollie Stones and Safeway sell halves), meat pulled off into chunks

2 heads romaine, chopped small

2 celery stalks, diced

1 avocado, diced

⅓ cup parsley, chopped

⅓ cup grated parmesan cheese

2 cups cubed bread (from a sour baguette preferably)

2 TBSP olive oil

Garlic powder

Italian dressing (I like the Good Seasons brand)

 

Toss cubed bread with olive oil and spread evenly on a baking sheet.  Sprinkle garlic powder over the top.  Bake at 350 degrees for about 10 minutes, or until golden brown.  Take out of oven and transfer to a small bowl to cool.  These are your croutons!

Combine all ingredients in a large bowl and toss with salad tossers.
